We watched human hand filleting pros to see how finely and precisely they separate the fillet from the main bone by hand. Then the challenge was to do it as well - or better.
The BAADER 582 is the next generation of whitefish filleting machines, designed to maximize yield, hygiene, performance and fillet quality. All cutting tools are computer controlled. The consistent running of fish through the machine guarantees a higher throughput. Machine settings can be changed during operation and stored in a recipe management system for easier handling.
The fillets produced by the new BAADER 582 are of outstanding quality with very little need for additional trimming.
The BAADER 582 has been specially designed to accept a wide range of different whitefish species and can readily handle high value and soft fish products. The BAADER 582 significantly reduces subsequent trim-work downstream.
